已屆12月底，將前行至 2022 年
當我開始了 DB-Bahn 火車旅行時，我帶走旅行中足以滋養我的點滴，找出各城市的代表性食物作為靈感，從其中受到啟發並讓新菜單成形。
無論如何 2021 年尾聲，我會帶著用餐者，來到一段過渡性旅程，穿越各個城市前往至歐洲重要的交通樞紐法蘭克福後，終抵達我的家鄉，北美加拿大溫哥華市。
This is December-onward to 2022
Munich, as a city dating back to the millennia, had been exhilarating and mesmerizing. As I savored and reorganized my photo albums with the profound memories of this old city for the past few days, I hauled over my shoulder the sturdy and trusty old backpack that has undoubtedly-through its repeatedly repaired seams-revealed its taletell true age with my travels over this very past decade.
As the snow flakes began to swirl from the sky, it was time to move on.
From the east to the west stood an invisible wall-the very reminding remnant of the past war era which had torn the country in two-now apparent in the degree of prosperity and the liveliness of its inhabitants and their business districts. The West has bloomed, yet the East staggered-still just summoning enough strength to forgive, accept, and progress.
From Munich to Berlin to Hamburg to Frankfurt, there are influences from its neighboring countries all over-the schnitzel of Austria, the pickling capital of Poland, the seafood and the foraging influence of Denmark, and the nightly meticulous fine dining schemes of France-the result is a tug of war between the mixing of the contemporary new and the century old traditions as the ideas are more than apparent in their cuisines. As I embarked on my trip inside the D-Bahn trains, I grabbed whatever could nourish me for the duration of each journey. I looked to the iconic foods in each city and was more than inspired and compelled to create my very own. And thus, for whatever remains in the days of 2021, I take you, engaging diners, on a transient trip with me, through various cities to Frankfurt, the ultimate transit hub in Europe and onward, to Vancouver, British Columbia, Canada-the one and only, my very hometown.

The iconic crackling of the roasted pig knuckles will be missed

In lieu of leek, green garlic tempura, and fermented stuff

Exactly what it says, all packed into one with olives and truffles
Potato to fill up the empty stomach
The Best and the unorthodox usually stays, fermented potato on potato
This is Corn version 3.0, with enough schnitzels already
Very filling, meaty, lots of corns and its derivatives
Some vegetables of broccoli in the tart to offset the meaty
I love broccoli, edamame beans, some ants
Squid is the taletell signs of being close to the North
Squid, lentils, mentaiko, seaweed, pickled beans
Banana is the travel companion
Aerated cake, fermented fruit, maybe aged banana with peels if you are lucky
Sweet Italia, thousands of miles away, yet still within the reach
Mascarpone, grapefruit, olive, pineapple, pizza
